Traditional Friselle, cooked with the artisanal method in a wood fired oven. Made of durum wheat, they are soaked in cold water for a few seconds and seasoned with tomatoes, salt and extra-virgin olive oil. You can also taste with other condiments: grilled aubergines or roasted peppers.
The friselle (or frise) is a typical product of the peasant apulian tradition. Made by hand with simple and genuine ingredients, they are donuts of bread, cooked in the oven, divided in half and composed of one porous side and another compact.
Alternatives to bread for their capacity to keep long term, were consumed when people were away from home for work, but also during long journeys, such as those of the Crusaders in the Holy Land. The central hole allowed them to be transported strung in a string to the belt, forming a sort of necklace. In the most recent past, they bathed directly in the sea, seasoned with only fresh tomatoes.
